Reunited and It Tastes So Good!

Here’s another Hambell family favorite that I grew up on. (Check out Easy Ranch-style Beans and Chicken Divan for a few other family favorites!)

As kids, we loved Spanish Rice Pie! I mean, who doesn’t love a meal cooked in a pie shell?! Helloooo, chicken pot pie & quiche!

Sadly, Spanish Rice Pie and I parted ways after I moved out on my own.  It wasn’t until my mom had come for a visit, many years later, that we were re-united (and my hubby & daughter were introduced to this quick & easy comfort food)!

Since her visit from a few years ago, Spanish Rice now makes a regular appearance on the Schirmer menu plan (at the request of Erik!)

Spanish Rice Pie
Spanish Rice Pie is a quick and easy dinner option that the whole family will love. Make it ahead of time and freeze it, or eat some now and have the rest for leftovers. Its delicious, no matter how you slice it.

Instructions
  1. Gather your ingredients
  2. Brown Hamburger, Onion Soup Mix & Green Pepper
  3. Drain & add rice, tomato soup & cheese and simmer for 5 minutes
  4. Transfer Spanish rice into pie shells & sprinkle remaining 4 oz. of cheddar cheese on top
  5. Bake at 350 degrees until heated thoroughly (30 minutes)
  6. Remove from oven, let cool for 10 minutes, and enjoy!
Recipe Notes

Recipe yields two Spanish Rice pies.  Each serves 4 people. Eat one & freeze the other, or, if you'd prefer to make only one pie, use remaining ingredients for stuffed peppers!
