An All-American Meal Your Family Will Love

Chicken Divan is a recipe that was ear-marked in the tattered, and loved, cookbooks of both my grandma and mom.   It’s near-and-dear to my heart because it tastes like childhood to me.  It’s also the first meal I made for my (now) husband when we first started dating! I totally believe the old adage that the best way to a man’s heart is through his stomach, and Chicken Divan is case-in-point!

This creamy, cheesy broccoli and chicken goodness is a comfort food that tastes amazing on a cold day, but can even work as a meal in the middle of Summer.  I’d be remiss if I didn’t mention that it tastes even better as left-overs the second day.

Added bonus:  Kids love it! Emerson, my 4-year-old doesn’t put up a fight to eat her broccoli when she’s eating this meal!

Chicken Divan
This is one of those classic casseroles that makes its way down the generations.  Its filled with creamy, cheesy, chickeny goodness and a healthy helping of broccoli to round out the dish.   It's also picky-eater approved! (Just ask my father-in-law and 4-year-old daughter, they both love it too!)

Instructions
  1. Gather ingredients and preheat oven to 350 degrees
  2. Boil chicken and cook broccoli, let chicken cool enough to cut into small pieces.
  3. Drain broccoli and cover bottom of 13-in by 9-in Pyrex cooking dish, followed by chopped chicken.
  4. Layer chopped chicken on top of the broccoli.
  5. Mix together cream of chicken soup, lemon juice, mayonnaise and curry powder.
  6. Pour sauce over chicken and spread evenly.
  7. Spread Shredded Cheese over the sauce.
  8. Combine bread crumbs and butter in bowl
  9. Microwave bread crumbs and butter for 30 seconds, or until butter is melted
  10. Mix together until bread crumbs are coated in butter
  11. Spread bread crumb topping over cheese evenly
  12. Bake for 30 minutes, or until top is golden brown and bubbly. Remove from oven and let cool for ten minutes before serving.
  13. Enjoy!
